Okay! So this is my take on a mexicali burger. I found a recipe on HEB.com for a salsa bean burger. It said to get some frozen, cooked patties. Well, that just did not sound good to me. I purchased some ground turkey instead and mixed up the recipe a bit. These burgers were so good!! We ate them for lunch again the next day. Here’s the recipe and directions.
1 lb ground extra lean turkey
1 1/2 cup salsa or pico de gallo (I used salsa)
1 cup refried beans
1 cup of broken up fritos
Monterey Jack cheese slices
Buns
Mix about a 1/2 a cup of salsa/pico to the turkey with some onion powder, salt and black pepper (about a 1/4 tsp of each). Divide the meat into 4 patties and put onto hot skillet with a little oil. The turkey sticks pretty bad. Cook until done. Mix the beans and rest of salsa and heat in microwave. Your cooking is now done. Now to assemble…Take a bun, put a pattie on the bottom, then some of the bean mixture. Put some crushed chips on top of that and a slice of cheese. Voila! Salsa Bean Turkey Burgers. I bought some sweet potato fries to go with them. YUM!!

Ok – we will definitely be trying these! We love Turkey burgers and we love Mexican so it sounds delicious!!
Which sweet potato fries did you use?
