I love Salmon. I love that it is usually very easy and cooks so quickly. It is healthy, tastes great (to me anyway) and looks great on a plate. Put some veggies or pasta with it and your meal is complete. You never feel too full after eating it either and that is always a great feeling.
Nate never cared much for salmon, but he has grown to be a fan. I have made several meals with salmon. Salmon and Ravioli being one of them. It is very versatile and if you do not overcook it, it is so yummy and juicy.
This salmon went with some bacon orzo that I made. It had a matching ingredient and just went so well together. Put some asparagus, green beans or brussel sprouts on the side and perfecto!
Roasted Salmon
Recipe adapted from: Family Circle
4 Salmon Fillets (4 oz each)
Salt and Pepper
1 1/2 Tablespoons Dijon Mustard
Directions:
Place salmon skin-side down on a baking sheet lined with nonstick foil. Season each fillet with salt and pepper. Spread mustard on top. Cook at 400 degrees oven during for 13-15 minutes.
