I love a dinner that does not require time, energy or cooking for that matter. That is why these tacos will be a staple for you working moms and dads. They require hardly any of the things stated previously.
I have been making these tacos for a while now and they are so good. When I first found the recipe, the ingredients did not seem so promising. Man, was I wrong!
These are one of my favorite chicken tacos. Spicy, but not too spicy. You can control the heat. Creamy and full of flavor.
All you have to do is get the rotisserie chicken and cut it up. Add the mayo, pepper and adobo sauce and mix it together. If you are like me, the chicken has been in the refrigerator, so it may need to be heated before mixing it with everything else.
Then I put this fabulous mixture in a corn tortilla that has been fried until crisp in vegetable oil.
Did I mention that these tacos were SO yummy?
My family loves anything in a taco shell and these are a fave. You can add as many toppings as you like. I keep it simple.
Spicy Chicken Tacos
Recipe Adapted From: Recipe.com
1 1/2 Cups Chopped Chicken (Half of a rotisserie chicken.)
1 Chipotle Chili in Adobo
1 Tablespoon Adobo Sauce
1/3 Cup Mayonaise
Tortillas (flour or corn; whatever you prefer)
Toppings: Cheese, lettuce, tomatoes, scallions
Direction:
Warm chicken in microwave on high for 1 minute. Mix together with chipotle chile, adobo sauce and mayonnaise.
Place 2 to 3 tablespoons of chicken mixture in each taco shell. Serve immediately.
