Cake Brownies! Your Next Best Friend

Oh man!  There is nothing better in this world than chocolate.  If you eat ice cream at all this summer, you cannot eat it without one of these brownies.  My goodness!  It makes enough for an army.

These brownies are definitely sheet cake texture.  They are pretty hard to beat when you top them with some scrumptious fudge icing.  My family cannot get enough of these little guys.  They are the #1 requested baked good out of my kitchen.  That is because you cannot beat chocolate!

This batch that I baked was made for my brother-in-law, Brad.  He had a birthday party and this was his so-called birthday cake.  He is not crazy about sweets, but the boy can’t resist these.  I told you…these puppies can bring a grown man to his knees.  We even stuck a candle in one.  Happy Birthday, Brad!

Recipes for the brownies and icing are in Better Homes and Garden Cook Book.  This edition is no longer in print and I cannot find the recipes anywhere to reference, so I will share.

Cake Brownies

1 1/4 C of Sugar

3/4 C Butter/Margarine

1/2 C Unsweetened Cocoa Powder

2 Eggs

1 tsp Vanilla

1 1/2 C All Purpose Flour

1 tsp Baking Powder

1/2 tsp Baking Soda

1 C Milk

1 C Chopped Pecans or Walnuts (optional)

Grease a 15x10x1 baking pan; set aside.  In a pan heat sugar, cocoa and butter over medium heat until melted.  Stir constantly.  Remove from heat.  Add eggs and vanilla.  Using a wooden spoon, beat lightly just until blended.  Combine flour, baking powder and baking soda.  Add flour mixture and milk alternately to chocolate mixture.  Stir in nuts if wanted.

Pour batter in to baking sheet.  Bake at 350 for about 20 minutes or until done.  Cool 2 hours on wire rack and then ice.

No-Cook Fudge Frosting

4 3/4 C Sifted Powder Sugar

1/2 C Unsweetened Cocoa Powder

1/2 C Butter/Margarine

1/3 C Boiling Water

1 tsp Vanilla

Beat all ingredients in mixer until well combined.  Let stand and cool until spreading consistency is reached.  (I like mine fairly thick.)
